CHAR-BROILED MARINATED SHRIMP

Marinated Grilled Shrimp Ingredients
  • 16 jumbo shrimp, 15-20/lb.
  • 2 c. Caesar salad dressing
  • 1 lemon
  • 4 lettuce leaves
Marinated Grilled Shrimp Instructions
First of al is to split the shrimp down the belly, between the legs, leaving the shell on. And then spread the shrimp open and flatten on a hard surface, being careful not to smash the shrimp. Next marinate the shrimp in the Caesar dressing for at least 10 minutes.

Cook shrimp on outdoor grill or indoor char-broiler, with the shell side facing upward. When the shells begin to turn red, remove from grill and finish in oven at 350 degrees for 3-5 minutes or in microwave on high for 30 seconds, until shrimp are firm. Serve on lettuce leaves and garnish with lemon wedges. Serves: 4 persons. Enjoy the marinated shrimp !

MARINATED SHRIMP KABOBO

Marinated Grilled Shrimp Ingredients
  • 1 (4 1/2 oz.) cans shelled deveined shrimp
  • 1 (8 oz.) pkg. frozen artichoke hearts, cooked as directed & drained
  • 1/2 (8 oz.) bottle clear French dressing
Marinated Grilled Shrimp Instructions:
Rinse shrimp; drain. Toss shrimp and artichoke hearts with French dressing. Cover; refrigerate for at least 1 hour before grilling. Drain marinade off shrimp and artichoke hearts; reserve. Thread shrimp and artichoke hearts alternately on 6 thin wooden skewers. Grill over coals until done to taste. Yield: 6 servings.

MARINATED SHRIMP KABOBS

MARINATED SHRIMP KABOBS
Marinated Grilled Shrimp Ingredients
  • 32 large fresh unpeeled shrimp
  • 1 (15 1/4 oz.) can pineapple chunks in juice, undrained
  • 1/2 c. oil free Italian dressing
  • 1 (8 oz.) can no salt tomato sauce
  • 1 1/2 tbsp. brown sugar
  • 1 tsp. prepared mustard
  • 1 lg. green pepper cut into 1 inch cubes
  • 1 lg. sweet red pepper cut into 1 inch cubes
  • 12 pearl onions
  • Vegetable cooking spray
  • 2 c. cooked long grain rice
Marinated Grilled Shrimp Instructions
Peel and devein shrimp, leaving tails intact. Set aside. Drain pineapple, reserving 1/4 cup juice set aside. Combine reserved juice, Italian dressing, tomato sauce, brown sugar and mustard. Place shrimp in a shallow dish; add juice mixture, and toss gently. Cover and marinade in refrigerator at least 3 hours. Stir occasionally. Remove shrimp from marinade. Place marinade in small saucepan, bring to boil. Reduce heat and simmer 5 minutes.
Alternate shrimp, pineapple chunks, peppers, and onions on 4 metal skewers. Coat grill rack with cooking spray, place on grill over medium hot coals. Place kabobs on rack and cook 3 to 4 minutes on each side until done, basting frequently with reserved marinade. Serve over cooked rice.

MARINADE:
Marinated Grilled Shrimp Ingredients :
  • 1 c. dry white wine
  • 1 c. olive oil
  • 1/2 c. chopped basil
  • 1 tbsp. coarse black pepper
  • 1/2 tsp. cajun spice (optional)
  • 16+ lg. shrimp, peeled, deveined (leave on tails)
Marinated Grilled Shrimp Instructions
Thin lemon slices
Mix marinade in shallow bowl, add shrimp, cover, refrigerate for at least 3 hours, turning occasionally. Set grill on high heat. Skewer shrimp and lemon slices on bamboo skewers, alternating.
Grill until shrimp just become opaque basting occasionally, about 3 minutes per side.

Marinated Grilled Shrimp Ingredients
1/4 c. olive oil
  • 1/4 c. dry white wine
  • 1 tbsp. minced dry onion
  • 1/2 tsp. dried basil (1 tsp. if fresh)
  • 1/2 tsp. dried rosemary
  • 1/4 tsp. pepper
Marinated Grilled Shrimp Instructions
Place 1 pound shelled shrimp in reclosable plastic bag, add marinade. Close bag, refrigerate 2-4 hours. Drain marinade. Thread shrimp on skewers. Grill over hot coals 8-12 minutes. Brush often with reserved marinade...enjoy it !
